This extraordinary coffee is a carefully curated blend of the
finest fruit-macerated honey Caturra lots from Jairo Arcila.
The exclusive Rainbow Decaf Edition showcases a vibrant array of flavors, achieved through a meticulous decaffeination process that preserves the coffee's natural sweetness and complexity. The caffeine is extracted from the bean using sugar cane ethyl acetate (EA) and water which enhances sweetness while maintaining coffee attributes.
The green beans are put into a steam chamber where the
silver skin is removed from the bean. After this, the beans
are submerged in spring water and as soon the coffee is
saturated with water it is sent to the extractors where the
beans have direct contact with sugar cane ethyl acetate for 8hours which dissolves the caffeine content.
Then the decaffeinated coffee is dried in a chamber to reach the same moisture content that it had prior to the process

Ratio: 15g coffee to 250g water
Water Temperature: 96C
Brew Time: 2:15-2.30m
Grind: Slightly courser than your usual filter grind
Two Pour Method
- First pour, 50g of hot water, allow coffee to bloom for 30 seconds
- Second pour, continue the pour until you reach 250g hot water in total
- Use a spoon to stir 10 times in circulation
