This washed Geisha was harvested the 24th of May 2024, brought down to Planadas, was pulped immediately and put into blue fermentation tanks with lids for 72 hours. Afterwards it has undergone a mechanical drying process, imitating natural drying. That means the silo was turned on for 8 hours, then the coffee rested for 16 hours, it was turned on again, etc. At a humidity level of 20 %, Jorge stored the coffee in his warehouse for 48 hours to let the water stabilize again and finished the drying process.
We love Jorge’s work as a processor and we always refine processing techniques and times together after different times and temperatures. Mechanical drying gives us the chance to be less dependent of climatic changes. Edward does an amazing job at growing high end coffee cherries so we are sure you'll be happy with this floral and fruity washed Geisha!
Our V60 Recipe - a great starting point for brewing all of our coffees
Ratio: 15g coffee to 250g water
Water Temperature: 96C
Brew Time: 2:15-2.30m
Two Pour Method
- First pour, 50g of hot water, allow coffee to bloom for 30 seconds
- Second pour, continue the pour until you reach 250g hot water in total
- Use a spoon to stir 10 times in circulation
- Enjoy
